Paleo Pancakes

With two kids I have to change it up with what I cook every morning because they definitely will not eat the same thing every morning. Some mornings I have to get a little more creative than others.

One morning they may want eggs and the next morning they will not.

This morning I decided to do a healthier pancake for my kids. I decided to go with Paleo this morning because it's all natural items and since they usually love pancakes, I thought they would love this change. This is a much healthier option for them than the regular white flour pancakes with sugar, butter and syrup.

They actually loved the pancakes. They each ate one and a banana to go along with it. Rather than topping the pancakes with regular butter, I put some coconut butter on the top. This was the success I wanted for their breakfast this morning. One happy mommy and two happy kiddos.


 
 
Ingredients:
4 eggs at room temperature
1/2 cup coconut milk
1/2 cup of water
2 tsp vanilla 
2 tbs honey
1/2 cup + 2 TBL coconut flour
1 tsp baking soda
1/2 tsp cinnamon
1/4 tsp nutmeg
coconut oil 

Preheat griddle over medium high heat.  (The pictures are in a pan, but the griddle is so much faster & easier!) 
Beat eggs in a mixer till frothy! (I've tried mixing  by hand and the outcome is NOT as good - trust me.)  Add vanilla, milk, water and honey.
In a small bowl combine dry ingredients and mix well.
Add dry ingredients to wet ingredients and mix well.  
Make sure you batter is that of 'normal' pancakes. 
Too thin? Add coconut flour 1/2 tbs at a time.  
Too thick?  Add coconut milk 1 tbs at a time.
