Endive with Herbed Cheese & Walnuts

This past weekend was my grandmas 70th birthday party. We had an assortment of great appetizers and main courses.

The party went off with a bang! She loved it and loved all the entertainment and food we had for the party.

Planning went into play months ago and with 4 great minds (myself, mom, Kimberly & Uncle Rick), everything fell into place perfectly.

This endive appetizer came out great! I had actually never made it until the night before the party. At first I wasn't sure how it was going to turn out, but the next day, it was one of the first appetizers to go. Obviously everyone loved it!!!

Ingredients:
4 heads endive, washed and trimmed
8 oz ricotta cheese
1/4 cup fresh parsley, minced
1/4 cup fresh dill, minced
1 clove garlic, crushed
1 tsp. salt
1 tsp. pepper
Walnut pieces

Instructions:
In a small bowl, combine ricotta, parsley, dill, garlic & salt and pepper. Set aside.

To assemble, place a 1 tablespoon of cheese mixture onto endive and top with 1 walnut piece. Repeat until all endive leaves are stuffed with cheese mixture and walnuts.
