Leftovers.... Don't waste them!
Do you ever have leftovers in your fridge from the night before and you really don't want to eat the same thing you did the night before? You don't have to! Yes, you heard me right! You don't have to! Elevate that meal from the night before and make it something new!
With all these dinner and lunch items I've been cooking lately, we have an abundance of leftovers!
There are so many different things you can do with leftovers, Here are a few leftover options I have created:
Chicken:
Shred leftover chicken, warm in a saucepan or skillet. Add 1 tbs. chili powder 2 tsp cumin, and 1/4 cup water. Let simmer 5 minutes over medium low heat. Put chicken mixture in a warm tortilla, over a bed of salad, or even use the chicken to whip up an Enchilada Casserole.
Steak:
Thinly slice steak. Sauté some peppers and onions and serve on toasted bread or rolls with steak
Pork:
Usually if I have leftover pork, I make a simple stir fry. Over medium heat, sauté 1/2 cup onions, 1 thinly slicedbell pepper(red, yellow ir orange) and 4 minced garlic cloves in 1 tsp. sesame oil about 5 minutes. Add pork (cubed) to skillet. Add 5 tbs. soy sauce, 2 tbs honey, 2 tsp grated ginger, 1/2 tsp red pepper flakes. Sauté additional 2 minutes and add vegetables of your choice and cook and additional 5 minutes until vegetables have softened. I like to do a combination of bok Choy, water chestnuts, bamboo shoots, broccoli, baby corn and carrots.
Seafood:
Seafood can be tricky. You really don't want to cook for again because it will cause the seafood to get tough and rubbery which is not good. For seafood, I would just make a simple green salad with tomatoes, cucumbers, carrots, or whatever other salad toppings you love. You can also take the seafood and season with a little lime, cumin and chili powder and do a seafood taco, burrito or quesadilla.
Pasta:
Leftover pasta doesn't have to go to waste. For spaghetti, toss it in a large 13x9 pan, top with cheese and bake for 20-30 minutes at 350 degrees until cheese has melted. It's AMAZING! I've even combined some ricotta with the spaghetti and topped with cheese. It's like a lasagna spaghetti bake. So good!!!!

without giving you some kind of cooking ideas, that would just be wrong!
I hope this helps some of you who just throw leftovers away. Please note, I'm not saying to use leftovers that have been sitting in your fridge for over a week, I'm saying a couple days old kinda leftovers.
